Tomato & Jalapeno Breakfast Taco Recipe

Ingredients:

Tomatoes

Jalapeno

Parsley

Chives

2 tsp olive oil

1 egg

Cheddar cheese

Tortilla

Instructions:

  1. Chop and sauté the tomatoes in some olive oil with a sliced jalapeño. Let them get a little sear- don’t be afraid of high heat!
  2. Season with salt and pepper and a handful of fresh herbs like parsley and chive. Finish it all off with a warm corn tortilla, a little grated cheese and an egg however you like it.
