Sweet & Savory Breakfast Wrap: Organic corn tortillas, scrambled eggs, crispy bacon, avocado slices, and a drizzle of maple syrup. Perfect start!
Ingredients (Serves 2):
- 2 6” Organic Corn Tortillas by Vermont Tortilla Company
- 4 large eggs
- 4 slices of crispy bacon
- 1 avocado, sliced
- 2 tablespoons maple syrup
- 2 tablespoons milk or cream (for scrambled eggs)
- 1 tablespoon butter (or oil for cooking eggs)
- Salt and black pepper to taste
Instructions:
- Cook the Bacon:
- Heat a skillet over medium heat and cook the bacon until crispy. Transfer to a plate lined with paper towels to drain excess grease. Set aside.
- Scramble the Eggs:
- In a bowl, whisk together eggs, milk (or cream), salt, and pepper.
- Heat the butter in a nonstick skillet over medium-low heat. Add the eggs and cook gently, stirring with a spatula, until soft and creamy. Remove from heat.
- Prepare the Tortillas:
- Warm the tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.
- Assemble the Wraps:
- Lay each tortilla flat and layer with scrambled eggs, 2 slices of crispy bacon, and a few slices of avocado.
- Drizzle 1 tablespoon of maple syrup over each wrap.
- Wrap It Up:
- Fold the sides of the tortilla inward and roll it tightly from the bottom up. Slice in half, if desired.
- Serve and Enjoy:
- Serve warm, optionally with extra maple syrup on the side for dipping or a sprinkle of black pepper for garnish.
