Ingredients (Serves 2):
- 2 6-inch organic corn tortillas by Vermont Tortilla Company
- 1 medium sweet potato, diced
- 1/2 cup black beans, cooked and drained
- 1 cup kale, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cumin
- Salt and black pepper to taste
For the Lime Crema:
- 1/4 cup plant-based sour cream or plain vegan yogurt
- 1 tablespoon fresh lime juice
- 1/2 teaspoon lime zest
- Pinch of salt
Instructions:
- Roast the Sweet Potatoes:
- Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway, until tender and caramelized.

- In a small bowl, whisk together plant-based sour cream (or yogurt), lime juice, lime zest, and a pinch of salt. Set aside.
- Sauté the Kale:

- Warm the Tortillas:

- Fold the sides of the tortilla inward and roll tightly from the bottom up. Slice in half if desired and serve warm.
