Ingredients (Serves 2):

  • 1 medium sweet potato, diced
  • 1/2 cup black beans, cooked and drained
  • 1 cup kale, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • Salt and black pepper to taste

For the Lime Crema:

  • 1/4 cup plant-based sour cream or plain vegan yogurt
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon lime zest
  • Pinch of salt

Instructions:

  1. Roast the Sweet Potatoes:
    • Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway, until tender and caramelized.
