Ingredients (for 60 servings):
- 60 Vermont Tortilla Company's 6-inch bulk tortillas
- 2 pounds smoked salmon, thinly sliced
- 10 ripe avocados, sliced
- 4 cups crème fraîche
- 2 large cucumbers, thinly sliced
- 2 red onions, finely sliced
- 2 cups capers
- Fresh dill for garnish
- 1 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Prepare the Tortillas:
- Preheat the oven to 350°F (175°C). Cut each tortilla into four equal quarters to create small triangles.
- Arrange the tortilla triangles on baking sheets and brush lightly with olive oil.
- Bake for about 5-7 minutes, or until the tortillas are crisp and golden. Let them cool.
- Prepare the Crème Fraîche:
- In a medium bowl, mix the crème fraîche with lemon juice, salt, and pepper to taste. Set aside.
- Assemble the Tortilla Bites:
- Spread a thin layer of the lemon crème fraîche on each tortilla triangle.
