Ingredients (Serves 2):

- 1/2 lb thinly sliced bulgogi beef (or pre-marinated bulgogi)
- 1/2 cup kimchi, chopped
- 2 teaspoons gochujang sauce (adjust to taste)
- 1/4 cup shredded carrots
- 1/4 cup sliced cucumber
- 1 teaspoon sesame seeds
- 1 green onion, thinly sliced (optional)
- 1 tablespoon vegetable oil
Instructions:
- Cook the Bulgogi Beef:
- Heat a skillet over medium-high heat with vegetable oil. Add the bulgogi beef and cook for 3-5 minutes until browned and fully cooked. Set aside.
- Warm the Tortillas:
- Heat the Vermont Tortilla Company corn tortillas in a dry skillet over medium heat for 10-15 seconds per side until warm and pliable.
- Assemble the Wraps:
- Spread 1 teaspoon of gochujang sauce onto each tortilla.
- Layer the cooked bulgogi beef, chopped kimchi, shredded carrots, and sliced cucumber.
- Garnish and Wrap:
- Sprinkle with sesame seeds and green onion for garnish.
- Fold the sides of the tortilla inward, then roll it tightly from the bottom up to secure the filling.
