Homemade Habanero Mango Salsa and Chips

Homemade Habanero Mango Salsa and Chips

Ingredients:

2 ripe mangoes, peeled and diced

2 habanero peppers, seeded and finely chopped

1 red bell pepper, diced

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/4 cup lime juice (about 2 limes)

1 tbsp honey

Salt to taste

Instructions:

Prepare Ingredients: Start by preparing all the ingredients. Peel and dice the mangoes, seed and finely chop the habanero peppers (be careful and consider wearing gloves), dice the red bell pepper, and finely chop the red onion and cilantro.

Combine Ingredients: In a medium-sized bowl, combine the diced mangoes, habanero peppers, red bell pepper, red onion, and cilantro.

Add Lime Juice and Honey: Pour the lime juice over the salsa mixture. Add the honey and stir everything together until well combined.

Season with Salt: Taste the salsa and add salt to your preference.

Chill: Cover the bowl and let the salsa chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together.

Baked Tortilla Chips

Ingredients:

6 Vermont Tortilla Company Tortillas (any flavor, but turmeric or traditional would be great)

2 tbsp olive oil

1/2 tsp salt

Optional: 1/2 tsp chili powder or other seasoning of your choice

Instructions:

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Tortillas: Stack the tortillas and cut them into 6-8 wedges each using a sharp knife or pizza cutter.

Season the Chips: Place the tortilla wedges in a large bowl. Drizzle with olive oil and sprinkle with salt (and any optional seasoning if desired). Toss until the chips are evenly coated.

Bake the Chips: Arrange the tortilla wedges in a single layer on a baking sheet. Make sure they are not overlapping to ensure even baking.

Bake: Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the chips are crisp and golden brown. Keep an eye on them to avoid burning.

Cool and Serve: Remove the chips from the oven and let them cool on the baking sheet for a few minutes before serving.

Serving Suggestions

Serve the habanero mango salsa in a bowl with the freshly baked tortilla chips on the side.
