Ingredients:
- 8 Vermont Tortilla Company's 4-inch street tacos
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- Mint leaves for garnish (optional)
Instructions:
- Prepare the Chocolate Coating: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until the chocolate is completely melted and smooth.
- Dip the Tortillas: Using kitchen tongs, dip each 4-inch tortilla into the melted chocolate, coating one side and the edges. Place the chocolate-coated tortillas on a baking sheet lined with parchment paper. Refrigerate for about 15 minutes, or until the chocolate is set.
- Make the Sweet Cream Filling: In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer on high speed until stiff peaks form. This should take about 3-4 minutes.
- Assemble the Tacos: Once the chocolate on the tortillas has set, gently fold each tortilla into a taco shape. Fill each taco with a generous dollop of the sweet cream filling.
- Add Fresh Berries: Top the cream filling with a mix of sliced strawberries, blueberries, and raspberries.
- Garnish and Serve: For an extra touch, garnish the chocolate tacos with fresh mint leaves. Serve immediately for the best taste and texture.
